‘Khao Shae’ (ข้าวแช่) Thai Summer Dish Festival

เทศกาลข้าวแช่เทวาศรม – ร่วมรื่นรมย์ หลบร้อน ผ่อนคลาย ไปกับข้าวแช่ หอมละมุน รสชาติละไม ตลอดเดือนเมษายนนี้ ที่ร้านอาหารเทวาบิสโทร เทวาศรมหัวหินรีสอร์ท

“ข้าวแช่” เป็นตำรับอาหารไทย ที่เดิมมีถิ่นกำเนิดมาจากชาวมอญและใช้ประกอบในเทศกาลสงกรานต์ของชาวมอญ จนถือเป็นประเพณีสืบต่อกันมาว่าในวันสงกรานต์จะต้องทำข้าวแช่ถวายพระเพื่อความเป็นสิริมงคล ในสมัยรัตนโกสินทร์คนไทยได้รับเอาวัฒนธรรมข้าวแช่มาและนิยมรับประทานในช่วงฤดูร้อน ตำรับข้าวแช่ของแต่ละถิ่นมีความคล้ายคลึงกันแต่ก็มีอัตลักษณ์แตกต่างกันไป โดยเมื่อพูดถึงข้าวแช่มักเรามักจะนึกถึงอาหารของชาววังและข้าวแช่ของจังหวัดเพชรบุรี

เครื่องเคียงของข้าวแช่จะมีหลากหลายอย่างตามแต่ตำรับ เช่น ลูกกะปิทอด พริกหยวกสอดไส้ ปลาเส้นผัดหวาน หมูฝอย พร้อมตกแต่งด้วยผักสดแกะสลัก การสรรหาและจัดเตรียมเครื่องเคียงต่างๆ ตลอดจนการหุงข้าวและน้ำอบควันเทียนลอยดอกไม้หอม มีขั้นตอนที่ละเอียดประณีต จึงเป็นอาหารไทยที่ควรค่าแก่การอนุรักษ์ไว้
